Recipe:

 Mincemeat Pies

Ask a dozen people about mincemeat and you’ll like get one of two answers. Some will fondly remember how their mother or grandmother made mincemeat pies. Most of the rest will say, “Huh? What’s in that anyway? Does it really have meat in it?”

The answer is … complicated. Modern mincemeat is a spicy mixture of mostly apples and raisins. But if you go back a ways, mincemeat was indeed a pie made with chopped meat.

Some of the earliest recipes for mincemeat I have found date from the 14th century. These heavy, elegant pies were inspired by the Crusaders, bringing home ideas of new, exciting spices like cinnamon and nutmeg from the Middle East. It was common in the Middle East to serve meat sweetened with fruits and spices.  It became popular in England to recreate these exotic dishes, especially for elegant feasts meant to impress the neighbors in the holiday season.

These medieval mincemeat pies could be made from any type of meat, including mutton, veal, pork or venison. Some recipes even call for fish in a mince pie to serve on fish days when the church forbade eating meat.  The mixture usually called for prunes, currants, raisins, and/or dates.

Like meatloaf today, mincemeat over the years has had many variations, in the spices used, the type of fruit, and the crust. By the 18th century, crusts were flakier and apples and raisins were usually included in the recipe. It wasn’t until the late 19th and early 20th century that mincemeat lost the meat. As late as 1941, some mincemeat recipes still cared for meat (usually beef). 

The real change came in 1898 when dried or canned mincemeat (such as Nonesuch) was developed. This mixture of apples, raisins and spices was one of America’s first convenience foods. As with many pre-packaged, prepared foods, people lost track of what exactly was in that jar or box of mincemeat.

As popular tastes changed, pies were more commonly relegated to the dessert course. Homemade pies have given way to more store-bought desserts. Gradually, the taste for mincemeat has declined. Most people I talk to are leery of a sweet meat and fruit mixture.

But old-fashioned mincemeat is definitely worth trying. The recipe below is adapted from and 1833 recipe byMrs. Child inThe American Frugal Housewife. Dedicated to those who are not ashamed of economy. The modern version I developed makes 4-5 pies, but can be easily cut in half.

And if you still don’t want meat in your pie? That’s okay. You can omit the meat and make a spicy, apple and raisin pie –perfect for the Holiday season.

 

Modern Recipes: Mincemeat for 2 pies

3/4 c. shortening (or suet)
1 1/4lb beef roast (chuck roast is fine)
1 1/2lbs apples (about 4 or 5 medium apples)
1 lb. raisins ( about 2 1/2 cups)
1 ½ c. sugar
¼  c. brandy
1 T. lemon juice
1T. cinnamon
2 t. cloves
1/2 T. nutmeg
1/4 t. pepper
2 c.apple cider

Freeze the shortening, and dice while still frozen. Keep cold.

Cover beef with water, bring to a boil, then reduce heat and simmer for 30 minutes or until the meat tests 170 degrees. (The amount of cooking time will vary with the thickness of the beef. Let cool, then dice small. Be careful to remove all gristle but leave in any hard fat (which is like suet.)

Peel, core and dice the apples. Mix beef, apples, and shortening with the remaining ingredients.

Pie Crust: for 2 pies

4 c. flour (approx. ½ lb.)
1⅓ c. shortening (or butter)
1 t. salt
10 T. cold water

Mix the flour and salt. Rub or cut the shortening into the flour until it resembles coarse meal. Add water. Mix lightly. Gather the mixture into a ball and press solid. Cut into 4 pieces (two for the bottom crusts two for the top crusts.). Roll each out to a circle. The circles for the bottom crusts should be about an inch larger than your pie plate. Carefully place one circle in each pan. Add the filling and cover with the top crust. It helps to wet the edge of the bottom crust before placing the top crust on the pie. Pince the edge all around to seal the pie.Cut vent slits. Bake at 375 degrees for 45 to 55 minutes. Serve warm or cold.

Good Food Is a Great Bribe

 

Unlike many mysteries heroines, Kate doesn’t cook or craft, but some secondary characters do.Something Prowling in Paradise Park starts with Kate heading to a dinner meeting at the house of her boyfriend, Mayor Todd Paradise. One of his teen sons has become a good cook, and what better way to bribe someone to help you then with a great meal? Here’s a peek:

 

Finn added some ingredients to the pan and covered it. “This needs to cook for twenty minutes.” 

“Can we talk about the dogs now?” Alec asked. “I’m sorry, I know you just got here, but ...”

“But you invited me here for a reason.”

Alec bit his lip, looking guilty. 

“I don’t mind,” I said. “I’ve already had Clarence and Arnold ask for help on behalf of their friends today. That’s what friends are for.” 

“Sounds like you’re awfully busy,” Todd said.

“That’s a good thing.” Whiskers had his head pressed against my thigh, which meant I had to brace myself on the counter or risk toppling over. “Let’s sit down and you can tell me what’s up with the dogs. You’re not trying to convince your dad to get another one, are you? You already have, what, two hundred pounds of dog? That’s like four medium sized dogs or about a hundred Chihuahuas.”

Todd chuckled. Alec managed a weak smile. Finn didn’t bother pretending to be amused. Maybe this was more serious than “about the dogs” suggested. We settled in the living room, with Whiskers’s head on Alec’s lap.

“Okay, what’s the issue with dogs?” I asked.

“Someone’s been stealing them!” Alec wrapped an arm around his dog’s giant head.

“Stealing how?” I asked.

“Some have gone missing at night from their yards, and a couple disappeared from a dog park,” Finn said.

“What makes you say they’re being stolen rather than getting loose and lost?”

“Animal control has had ten reports of missing dogs in the last two weeks,” Todd said. “Well, more than that, but ten that haven’t turned up again. Obviously not all lost dogs are found, but apparently the current numbers are unusual, and the owners of the ones Finn mentioned insist their dogs couldn’t have escaped by accident.”

“There could be more!” Finn said. “We saw a poster for a different lost dog that hadn’t been reported.”

 

Finn’s Chickpea-Rosemary Sauce

Serve over spaghetti or other pasta.

 

1 large white onion

2 Tbs. olive oil

lots of garlic (at least 6 large cloves)

2 cans chickpeas

1 (16 oz.) can peeled, whole tomatoes

2-3 Tbs. Chopped dried rosemary needles (2-3 tsp. powdered)

 

Mince the onion and sauté it in olive oil until caramelized, 5-10 minutes. Add garlic, cook 1 minute.

Add 1 can chickpeas with its liquid and mash a little. Drain the other can of chickpeas and add them. Drain most of the tomato juice off, and add tomatoes. Add the rosemary. Simmer 30-60 minutes.

As the sauce cooks, prepare your pasta according to package directions. Drain and mix with the sauce.

Sip Into Vacation Mode with An Amaretto Sour (and a Margarita!) Inspired by Cruises, Cocktails, and Corpses (For Deal Sharing Aunt)

There’s something magical about the first sip of a cold cocktail on vacation. The sun kissing your skin, the music in the background, and a sense that at least for a little while life has hit pause on all the chaos. That feeling was exactly what I wanted to capture while writing Cruises, Cocktails, and Corpses, the second book in my Taryn O’Kelly mystery series.

 

Taryn and her boyfriend, Alex, take a much-needed getaway cruise, hoping to leave stress and danger behind. Of course, in true cozy mystery fashion, murder isn’t far behind. But before the bodies start stacking up, there's a peaceful, perfect moment: a sunny afternoon, a speakeasy-themed lounge, and two drinks that set the tone for relaxation.

 

In one of my favorite scenes, Taryn orders an Amaretto Sour:

 

The lounge was decorated like a 1920s speakeasy, and light jazz was playing over the sound system. Our bartender was dressed like a flapper girl, her long dark hair pinned back with a feathered clip.

 

I ordered an amaretto sour, Alex a margarita on the rocks without salt, and a plate of nachos to share.

 

We took our drinks and snacks to the outdoor seating. I could not get over how wonderful the sun felt on my skin, and how beautiful the flowers and the palm trees were.

 

“Thank you for bringing me here,” I said. I didn’t want this moment to end. “It’s so peaceful and stress-free.”

 

That moment of pure peace and gratitude is one I think we all crave, whether we're on a cruise ship or curled up at home with a good book.

 

Today, I’m sharing Taryn’s drink of choice. A simple, satisfying Amaretto Sour you can whip up anytime you need a mental getaway. And, because great moments are even better when shared, I’m also including Alex’s order: a classic Margarita on the rocks.

 

Taryn’s Vacation-Ready Amaretto Sour

 

Ingredients:

 

    1 ½ ounces Amaretto liqueur

    ¾ ounce Irish whiskey

    1 ounce Natalie’s Margarita Mix

     

No margarita mix on hand? No problem! You can substitute:

    1 ounce fresh lime juice

    1 teaspoon maple syrup

    1 teaspoon water

     

Instructions:

 

1.    Fill a shaker with ice.

2.    Add the Amaretto, Irish whiskey, and margarita mix (or the lime juice/maple syrup/water combo).

3.    Shake well until chilled.

4.    Strain into a rock glass filled with fresh ice.

5.    Garnish with a slice of lime or a maraschino cherry, if you like.

 

Alex’s Classic Margarita on the Rocks (No Salt!)

 

Ingredients:

 

    2 ounces tequila

    1 ounce triple sec

    1 ounce margarita mix (or substitute 1 ounce fresh lime juice + 1 teaspoon maple syrup + 1 teaspoon water)

     

Instructions:

 

1.    Fill a rocks glass with ice.

2.    Add the tequila and margarita mix.

3.    Stir gently to combine.

4.    Garnish with a lime wedge, if desired.

(And if you like your margaritas salty, feel free to rim your glass with salt before pouring!)

 

Why did I choose these cocktails?

 

The Amaretto Sour is one of those drinks that’s deceptively simple but feels luxurious, just like Taryn’s unexpected escape. The sweetness of the Amaretto, the slight bite of the whiskey, and the citrus zing from the margarita mix (or fresh lime) come together in a way that’s relaxing yet lively, much like the cruise that kicks off all the action in Cruises, Cocktails, and Corpses.

 

Alex’s margarita, on the other hand, is clean, classic, and a little bolder, perfect for a character who is Taryn’s steady anchor in an unpredictable world.

 

Together, these two cocktails capture a perfect vacation afternoon: a little sweetness, a little kick, and someone you love to share it with.

Whether you're solving mysteries together or simply savoring the sunshine, the right drink (and the right company) can turn an ordinary afternoon into a memory worth holding onto.

Fearing the police are looking at the wrong people, Herbert begs Tabby to investigate. He knows what most don’t, that Tabby has psychic abilities that allow her to home in on emotions and motives. Since he’s a lifelong friend of Dr. Quig Quigsly, Tabby’s fiancé, she agrees. But before she finds answers, Sage’s former coworker is murdered, and her twin pleads with Tabby to find the killer. With dead ends at every turn, Tabby fears the city’s troubles are paranormal in origin. By investigating the crimes, she risks exposure of the way her family manipulates energy and uses other psychic talents. Keeping a low profile is essential. Meanwhile, Quig’s parents are throwing them a black-tie engagement party in two weeks, and Tabby is burning the candle at both ends. Auntie O’s Spiced Pecans

 

My amateur sleuth Tabby Winslow loves to eat spiced pecans year-round. She puts them in salads and eats them right out of the storage container as a snack. They are great for a quick pick-me-up. Tabby’s aunt, Oralee Colvin, in Candle with Care, which is A Magic Candle Shop Mystery, developed this recipe, and it’s a surefire winner among the Winslows. Auntie O is a fine cook!

 

Ingredients:

1/2 cup sugar

3 teaspoons ground cinnamon

1 teaspoon of cardamom

½ teaspoon of nutmeg

1/2 teaspoon salt

Pinch of all spice

1 large egg white

1 pound large pecan halves

 

Directions:

In a small bowl, combine the sugar, spices, and salt; set aside. In a large bowl, lightly beat egg white. Add pecans; stir until moistened. Sprinkle with sugar mixture; mix well.

Spread in a single layer on a parchment paper lined baking sheet. Bake at 300° for 20-30 minutes, checking them frequently after 20 minutes so that they don’t burn. [Cook to the 30-minute side for crunchy pecans, closer to the 20-minute side for chewy pecans]. Lift or slide the parchment paper onto a cooling rack. Enjoy!

 

Tabby recommends that you hide half of these to guarantee you’ll get your share. Otherwise, people will help themselves and eat the whole batch when you’re not looking!
